The Desert Oak Wattleseed of culinary use is always roasted and in your choice of whole or milled, a process that gives it an appetizing coffee like aroma and roasted pork like taste.
Desert Oak is great on desserts like ice-cream or on top of chocolate mouse, and when used with other spices such as Coriander Seed, becomes a great rub for a barbecued taste to meats, especially full-flavoured seafood such as Salmon.
Only a few wattles are edible, the others being poisonous, therefore the wild harvesting of Wattleseed should only be by professional expert guidance.
